Pappa al pomodoro, sopa Italiana de pan y tomate

Cómo hacer Pappa al Pomodoro. Una receta de pappa al pomodoro un tanto  inusual pero muy rica. Estoy seguro que casi nadie la conoce y la verdad es una forma de aprovechar el pan que tenemos duro de días anteriores.

Un plato que no suelen ofrecer los restaurantes italianos, una verdadera sopa tradicional de casa, de cocina de la abuela. Se puede tomar templada e incluso fría a diferencia de otras muchas.

Es muy similar a algunas sopas de tomate que se hacen en Andalucía en las que el pán es un elemento muy importante.

Ingredientes Pappa al Pomodoro:

  • 1 kg de tomates
  • 1 cebolla roja
  • 4 – 5 tajadas de pan duro
  • 3 – 4 cucharadas de queso parmesano rallado
  • Aceite de oliva virgen extra
  • Sal
  • Pimienta

Elaboración Pappa al Pomodoro:

Comenzamos lavando las hojas de albahaca. A continuación lavamos los tomates eliminando el pedúnculo y los ponemos en agua hirviendo por 3 minutos para después poderles sacar la piel fácilmente.

Eliminamos la parte seca de la cebolla y la cortamos en rodajas pequeñas. Colocamos una cacerola para sofreír la cebolla cortada con bastante aceite de oliva, cuando la cebolla esté sofrita le añadimos los tomates pelados. Lo dejamos cocer por unos 15 minutos aproximadamente.

Agregamos la sal, pimienta y unos 2 litros de agua caliente. Cuando entre en ebullición agregaremos las rodajas de pan duro.
Continuaremos cocinando hasta que el pan se transforme en una papilla y ya estará lista nuestra sopa Pappa al Pomodoro. Sirve los platos agregando las hojas de albahaca, un poco de aceite de oliva virgen extra y un poco de queso Parmesano rallado.¡Buen Provecho!
